made from 100% agave. It is created by distilling fermented juices with spontaneous or cultured

micro-organisms and extracted from ripe,

roasted agaves harvested in protected areas

belonging to the DOM,

i.e. the designation of origin of mezcal.

The official standards may sound clear,

but the reality around mezcal is much more complex.

It’s complicated history, full of twists and turns
